Ok, on facebook, if you remove someone as your friend, do they know..?

lke it says that_______ (person's name there) will not be notified, but lke, how does that work, how could they not know?.. and, if you decide to add them as a friend later, lke aftr you've already deleted them, can you still do it?.. help me please!! :)
